Why do apples always turn brown five minutes after the air hits them?

  1. Its the exposure to the air, it causes a reaction due to the an enzyme found in apples called polyphenol oxidase. Believe it or not, it actually oxidation.
    Sprinkling them in lemon or putting them in cold water helps.
